I know the title of this recipe may sound weird and not appetizing…but believe me! These are great! You might not even notice that you aren’t eating beef! (ok you probably will) But if you have never tried making a veggie burger, you should. You feel full like you would after eating a burger, minus the gross bloating!

Now, I will be honest with you…it does take some time chopping all the vegetables, but it is worth it!
What you will need:
1 cup uncooked quinoa, rinsed
2 cups vegetable or chicken stock
1 cup cooked chickpeas
1/2 cup freshly grated provolone cheese (or any type of grated cheese, we used parmesan)
1/4 cup panko bread crumbs
1/2 cup chopped carrots
2 green onions, thinly sliced
2 garlic cloves, minced
1 large egg + 1 egg white, lightly beaten
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
12 multigrain slider buns or dinner rolls
2 avocados, sliced for topping
1/2 cup chipotle mayo, for topping (cottage cheese is also a great topping)
We usually just make them regular size burgers and serve them on a multigrain bun or a bed of spinach. Avocado is an amazing topping. Ralph loves adding some honey mustard too!
